Sellou - Traditional Moroccan Food for Ramadan

One of things I am enjoying the most about Ramadan is eating the traditional foods. My favorite of all is Sellou. It is so delicious, satisfying and filling. I have been eating this just before bed every night, sometimes with a banana, and I experience no hunger the next day. It is, as described below, like an energy bar. It is something that I will continue to want to eat even after Ramadan is finished. For many Moroccans, this is what that eat for their early morning breakfast during Ramadan at 03:30 just prior to sunrise. It really makes sense as it is very healthy and sustaining. Here in Morocco, you can buy it at bakeries, but you can also make it yourself. I have included a video below and a link to a website for a recipe. If you live in a city that has a bakery that makes foods specially for Ramadan, you may be able to find it. Or you can try a Moroccan restaurant, if that's possible. It is definitely worth trying. Bon appetit!

"Sellou is made with browned flour, almonds, and sesame seeds. It is like an energy bar - In Morocco it is an essential dish during Ramadan when Muslims fast. it is also served to women after childbirth to give them more strength. Every family in Morocco has their special way of making sellou, some prefer it dry, others buttery, some fine and others crunchy. and they adjust the amounts of ingredients and spices to their taste. So today I am going to show you how to make the traditional recipe, but I am also sharing with you my 2 secret ingredients that make my sellou special! so if you choose to use them, I guarantee that people taste and say "there is something that makes it different and special!" - well, don't tell what it is!
